My co-worker Phil she makes this pie. This is so good. I recommend only using full milk cheese. Her mother use to make this pie. She is as italian as they come. Thanks for sharing Phil! Ingredients:

9 eggs |
6 lbs. whole milk ricotta cheese |
21/2 cups sugar |
3 tablespoons flour |
1 teaspoon vanilla |
1 teaspoon lemon juice |
1 teaspoon orange juice |
(pre-made pie crusts) |
makes 3 pies (3-8” or 2-9”) |
5 eggs |
3 lbs. whole milk ricotta cheese |
11/4 cup sugar |
11/2 tablespoon flour |
1 teaspoon vanilla |
1 teaspoon lemon juice |
1 teaspoon orange juice |
Directions:
1. Beat eggs in bowl; add vanilla, lemon, orange juice. Add sugar. Add to ricotta, add flour and mix well. Pour into pie crusts 2. Bake at 325 for 1-1 1/2 hours 3. This recipe really makes 4 full pies and 1 half pie, take some from the 4 pies to make a complete 5th. 4. Optional: you can add some chocolate chunks or chips to pie. I don't do this but I know some have. |
