1 t beef bouillon granules |
1/2 c water |
3 garlic cloves, pressed |
1/8 tsp pepper |
1 boneless sirloin steak, cut 1 thick (about a pound) |
1 small green pepper, cut into 1/4 inch strips |
1 small onion, cut into 1/4 inch slices |
vegetable oil |
2 c (4 oz) shredded mozzarella cheese |
4 (9 to 10 inch) tortillas |
Directions:
1. Combine bouillon, water and garlic in a small bowl 2. Cut steak into 1/4 strips 3. Place beef strips and marinade in a resealable plastic bag, turn to coat, marinate 1 to 3 hours, turning occasionally 4. Remove steak from marinade; lightly pat with paper towel to absorb some of the moisture 5. Discard marinade 6. Heat a grill pan or skillet over medium high until very hot 7. Place steak in pan; cook 6-8 minutes or until steak is medium rare, turning once 8. Remove to a grooved cutting board and cover with foil 9. Return pan to medium high heat and lightly spray with cooking oil 10. Add pepper and onion and cook about 5- 7 minutes or until crisp tender, turning occasionally 11. Remove vegetables to a bowl and wipe pan with paper towel and set aside 12. Cut steak crosswise into smaller pieces 13. For each wrap, sprinkle 1/2 C mozzarella cheese over tortilla 14. Place one fourth of the steak and vegetable in center; roll up tightly 15. Repeat with remaining tortillas 16. Heat pan over medium high heat until hot 17. Place wraps, seam side down, in pan. 18. Spray tops of wraps lightly with cooking spray; cook 2 - 3 minutes on each side 19. Remove wraps to a cutting board and cut diagonally; serve immediately. |
