Philadelphia German Butter Cake |

This cake is famous in the Philadelphia area from certain bakeries. I found a recipe that is just like the ones my family used to buy from the bakeries. And, I use my bread machine so it couldn't be easier! Ingredients:

1/4 cup shortening |
1 large egg |
1/2 cup milk (i have used soy milk with great success) |
1 tablespoon vanilla extract |
1/4 cup sugar |
1/4 teaspoon salt |
2 1/2 cups unbleached flour |
2 1/2 teaspoons bread machine yeast |
topping for cake |
1/2 pound unsalted room temperature butter |
2 cups sugar |
2/3 cup unbleached flour |
2 large eggs |
1/4 cup milk |
Directions:
1. Add cake base ingredients to bread machine in order listed. 2. Start the basic cycle and let the bread machine do the work for you! 3. Following the second knead, remove the pan from the machine and let it rise on your counter for about an hour. 4. Don't worry if it doesn't double in size - it will work. 5. While the dough is resting, make the topping. 6. Cream the butter. 7. Mix the flour and sugar and add to butter gradually, mixing in before adding more. 8. Add eggs one at a time and mix thoroughly. 9. Add milk and mix. 10. Preheat oven to 375 degrees F. 11. Press dough into a the bottom and up the sides of a 9x13 baking pan. (don't use one with very low sides, as it may rise in the oven a little too much and your topping might overflow the pan - can you tell I did that once?) 12. Prick the dough with a fork. 13. Spread topping over base and bake for 25-30 minutes. 14. It is done when the top looks a little crusty, but still gooey in the middle. 15. Let cool before serving, it will sink and look weird, but will be delicious! |
