I considered calling these Death Row Chocolate Peanut Butter Squares ....because, seriously, if I were being offered my last meal, these sinfully rich treats would make the list. Actually, they might just be the only thing on the list! Many thanks to the fabulous Lexington chef Phil Dunn, who so generously shared this recipe with me. (*prep time does not include preparing ganache and cooking time indicates chilling time) Ingredients:
3 cups chocolate cookies (finely ground) |
3/4 cup unsalted butter (melted) |
8 ounces unsalted butter (softened) |
4 cups peanut butter |
4 1/2 cups powdered sugar |
1 1/2 cups ganache (reference ganache by chef #372286) |
3/4 cup chocolate sprinkles |
Directions:
1. Combine ground cookies and melted butter and press into a greased half sheet pan. 2. Beat sugar, softened butter and peanut butter together until light and fluffy. 3. Press sugar/butter/peanut butter mixture onto crust until very level. 4. Pour warm ganache over the top and spread smooth. 5. Evenly sprinkle chocolate sprinkles over the top and chill for several hours before cutting into 1 inch squares. 6. Store squares in the fridge till ready to plate and serve. |
