This is one of Pete Luckett's recipes (he has a large fruit and vegetable market here in Halifax) and has some very good recipes. This is definitely for mango lovers. Ingredients:
2 tablespoons butter |
1 tablespoon lime juice |
1 tablespoon brown sugar |
1 large ripe mango |
1 large ripe banana |
3 tablespoons orange liqueur |
3 tablespoons brandy |
grated coconut |
Directions:
1. Melt butter. 2. Add lime juice and sugar, stirring until sugar dissolves. 3. Add mango, peeled and cut in 10 slices. 4. Add banana, sliced. 5. Cook about 2 minutes on each side until heated thru and slightly soft. 6. Add orange liqueur and brandy and flambe. 7. Garnish with coconut. 8. Serve immediately with ice cream or yoghurt. |
