This is a tasty breakfast or lunch :) I thought next time I might try scrambled egg and make for breakfast. It is quick and very easy. It is a great way to use up extra pesto. Enjoy :)
Ingredients:
1 english muffin
2 tablespoons pesto sauce
1/2 tomato
1/3 cup mozzarella cheese
Directions:
1. Toast your english muffin.
2. Spread pesto on top.
3. Put a slice of tomato over pesto.
4. Sprinkle with mozzarella.
5. Put in oven on 350°F until cheese is melted.
6. Enjoy.
