roasted new potatoes are great for serving as appetisers. Serve these with cocktail sticks stuck in and a small bowl of parmesan or sea salt for dipping them in.
Ingredients:
3 lbs tiny new potatoes
4 tablespoons olive oil
2 tablespoons vegetarian pesto sauce
Directions:
1. Heat oven to 180°C.
2. Toss the potatoes in the oil and place in the tray. Bake for 45 mins ensuring they are tender all they way through.
3. Drain any excess oil and toss the hot potatoes with the pesto.
4. Serve as directed above.
