This is a tasty, cheesy way to serve rice. It's best in the summer, served with fresh tomatoes and a crusty baguette. Ingredients:
1 1/2 cups wild rice |
3 cups water |
1/2 cup fresh basil |
3/4 cup pine nuts |
2 garlic cloves |
6 tablespoons olive oil |
3/4 cup freshly grated parmesan cheese |
salt |
pepper |
3 fresh tomatoes |
Directions:
1. Bring the rice to a boil. Reduce heat and simmer, covered, for 45 minutes. 2. Blend the other ingredients in a food processor to make a pesto sauce. 3. Add to the rice. 4. Serve with lots of fresh tomatoes to make up for the death by cheese and olive oil sensation. If it needs made up for, that is. I kind of like it. |
