I needed a quick and healthy dinner, and used what I had lying around. It turned out so good, I wanted to share it! Besides the frozen vegetables, I added some matchstick carrots and diced green pepper. Ingredients:
16 ounces frozen mixed vegetables (1 bag) or 16 ounces stir fry vegetables (1 bag) |
2 tablespoons olive oil |
12 ounces spaghetti, thin spaghetti, cooked |
1/2 cup pesto sauce |
2 fresh garlic cloves, finely chopped |
1/3 cup olive oil |
1/2 cup chicken broth or 1/2 cup vegetable broth |
1/3 cup parmesan cheese |
Directions:
1. Pour 2 tbsp olive oil into large pan, add frozen vegetables and garlic and cook until thawed but still crisp. 2. Add fresh vegetables of your choosing, pesto sauce, broth, and stir. 3. When everything has reached the same temperature, add pasta and olive oil. 4. Toss, serve with parmesean cheese. |
