Excellent! This is super easy to make. Go easy on the garlic or it will overwhelm the dish. Cheesy bread and a mixed green salad go great with this. Good hot or cold. Ingredients:
2 lbs tiny new potatoes |
1/2 cup fresh basil |
2 tablespoons pine nuts |
1/2 cup olive oil |
3/4 cup parmesan cheese |
salt and pepper |
Directions:
1. Cook the potatoes in a saucepan of boiling salted water for 15 minutes or until tender. Drain well and transfer to a serving dish. 2. Meanwhile, put the basil, pine nuts, garlic and a little salt and pepper in a food processor (the blender works too). Process for 30 seconds, adding the oil slowly, until smooth. 3. Remove the mixture from the food processor and place in a mixing bowl. Stir in the cheese. Spoon the pesto over the potatoes and mix well. |
