Pesto Pasta Salad (Cindy)

Cindy's pesto pasta salad
Ingredients:
1 lb whole wheat pasta
8 oz pesto
1/2 pound part skim mozzarella cheese
1 cup cherry tomatoes, diced
1/3 cup pine nuts, toasted
Directions:
1. cook pasta rinse with cold water, drain well
2. cut cherry or tomatoes in half
3. cube mozzarella cheese
4. toast fresh pine nuts lightly TOASTER OVEN: place on small baking pan spread out, toast for a few minutes until nuts just start to lightly brown. OR STOVE TOP: in small skillet (non-stick is best) heat nuts on low for a few minutes gently shaking the pan until nuts just start to lightly brown.
5. place all ingredients into a large bowl
6. mix together with pesto to evenly coat
7. serve room temp
