New potatoes get an Italian makeover in this yummy side dish. Ingredients:
1 lb new potato (halved or quartered if necessary) |
2 -3 teaspoons pesto sauce |
salt & freshly ground black pepper |
1 ounce parmesan cheese, coarsely grated |
Directions:
1. Place the new potatoes in a pan of boiling water. Cover and simmer for 15 minutes or until just tender. Drain and allow to cool slightly. 2. Toss the drained potatoes in the pesto, season and serve immediately, garnish with the parmesan. |
