I had this at a wedding buffet last weekend and fell in love! Ingredients:
4 cups prepared mashed potatoes |
2 tablespoons garlic (roasted and mashed) |
1/2 cup prepared pesto sauce |
1/2 cup butter (sliced thinly) |
2 tablespoons olive oil |
Directions:
1. Mix the mashed potatoes, garlic, and pesto.
2. Place in a buttered casserole dish and top with butter slices.
3. Bake on 350 just until the butter has melted.
4. Drizzle with olive oil and serve.
