1 salmon fillet (3 pounds) |
1/2 cup prepared pesto |
2 green onions, finely chopped |
1/4 cup lemon juice |
2 garlic cloves, minced |
Directions:
1. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5 minutes. 2. In a small bowl, combine the pesto, onions, lemon juice and garlic. Carefully spoon some of the pesto mixture over salmon. Grill 15-20 minutes longer or until fish flakes easily with a fork, basting occasionally with remaining pesto mixture. Yield: 12 servings. |
