Pesto-Flavored Ham and Pasta Salad |

Traditional pesto components (olive oil, garlic, basil, Parmesan cheese, and pine nuts) are tossed into a filling pasta salad. Ingredients:
1 pound uncooked small seashell pasta |
1/3 cup red wine vinegar |
1 tablespoon sugar |
2 teaspoons extravirgin olive oil |
1 teaspoon dijon mustard |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1 garlic clove, minced |
1 cup (4 ounces) preshredded parmesan cheese |
1 cup diced simple baked ham (about 5 ounces) |
3/4 cup chopped fresh basil |
1/4 cup pine nuts, toasted |
Directions:
1. Prepare pasta according to package directions, omitting salt and fat. Drain; place in a large bowl. 2. Combine vinegar and next 6 ingredients (through garlic). Add cheese, ham, basil, and pine nuts to pasta; toss gently to combine. Drizzle with vinegar mixture; toss to coat. Cover and chill. |
