This is a quick to throw together entree for a busy weeknight. And it happens to taste wonderful, as well. I believe I copied this recipe from a magazine at the doctor's office as I love these quick and easy recipes. Ingredients:
3 -4 boneless skinless chicken breast halves (about 1 pound) |
1/4 cup plus 1 tablespoon pesto sauce |
1 1/2 teaspoons sour cream |
1 1/2 teaspoons mayonnaise |
1 tablespoon shredded parmesan cheese |
1 tablespoon pine nuts |
Directions:
1. Preheat oven to 425 degrees F. Spray a baking pan with PAM. 2. Cut the breast halves into 1/2-inch cutlets and arrange on prepared pan. 3. Combine remaining ingredients and brush over chicken. 4. Bake 8-10 minutes in preheated oven. |
