Pesto Chicken Tortollini Salad |

Many different tastes in one salad. One of my favorites. Depending on the situation, I make it without the chicken - sometimes without the tomatoes Ingredients:
1 lb chicken, boiled and cubed |
1 (16 ounce) package cheese tortellini, frozen |
1 (10 ounce) envelope pesto sauce mix, knorr |
1 pint cherry tomatoes, halved |
1 cup walnuts, chopped into pieces |
1 cup mayonnaise |
2 -3 tablespoons balsamic vinegar |
Directions:
1. Prepare tortollini according to directions. 2. Mix pesto, mayo and vinegar together. 3. Add to other ingredients. 4. That's it! 5. Feel free to wing it - I usually end up adding more vinegar. 6. The pasta tends to absorb the mayo overnight. You will most likely have to add more mayo to moisted the salad. |
