2 cups chopped fresh parsley |
6 tablespoons dijon mustard |
2 tablespoons grated parmesan cheese |
3 garlic cloves, chopped |
2 teaspoons dried basil leaves |
2/3 cup egg substitute |
1 1/2 cups plain breadcrumbs |
8 small boneless skinless chicken breast halves, pounded to 1/4 inch thickness |
2 tablespoons margarine |
4 cups hot cooked rice |
Directions:
1. Heat broiler, Mix parsley, 4 tablespoons mustard, cheese, garlic, basil and 1/4 cup egg product until blended. Stir in 1/2 cups bread crumbs. Spread onto chicken breasts, roll up. Blend remaining egg product and mustard. Dip chicken rolls in egg mixture. Then in remaining crumbs, turning to evenly coat all sides. Cut each roll-up into 4 pieces, thread onto 8 skewers. Broil, 6 inches from heat, 10 to 15 minutes, or until chicken is cooked through, turning occasionally and brushing with margarine. Serve with rice. |
