Dinner Ingredients:
1 lb. boneless skinless chicken |
1 onion |
1 c carrots |
1 c broccoli florets |
1/2 c chives |
1 clove garlic |
1 cooking spray |
1 t olive oil |
1/4 cup water |
1/8 t salt |
2 t pine nuts |
1 clove garlic, peeled and crushed |
2 t grated parmesan cheese |
1 t olive oil |
1/8 t salt |
2 cups fresh basil |
Directions:
1. Saute chicken. Set aside. 2. Saute onions, then carrots, broccoli, chives, and garlic in olive oil. Add water and salt, cover allow to steam. 3. In food processor or blender, process nuts. Add cheese and oil; process until smooth. Add remaining ingredients. 4. Toss chicken and veggies in pesto, serve. |
