From an old Leggo's cookbook, sounds like a great dip or sandwich spread. Ingredients:
3 tablespoons butter, softened |
250 g cream-style cottage cheese |
50 g pine nuts, chopped |
1 tablespoon fresh basil, chopped |
2 tablespoons tomato paste |
black pepper |
Directions:
1. Beat butter & cottage cheese together until smooth. 2. Mix in the pine nuts, basil & tomato paste, season lightly with pepper. 3. Chill before serving. |
