Pesto and Cheese Tomatoes |

Sweet tomatoes topped with pesto and golden, bubbling cheese. Variation: Replace the Cheddar with thin slices of mozzarella. Ingredients:
6 tomatoes |
12 teaspoons pesto sauce |
3 ounces cheddar cheese, grated |
Directions:
1. Preheat the broiler to high. Cut the tomatoes in half and put into an ovenproof dish, cut side up. 2. Dot each with 1tsp of pesto. 3. Scatter the Cheddar cheese evenly over all 12 halves. 4. Broil for 5min or until the cheese is golden and bubbling and the tomatoes are soft. |
