Standard recipe with a slight twist. Ingredients:
3 cloves garlic |
2 cups fresh basil leaves |
3 tablespoons pine nuts (pignolia), lightly toasted |
1 dash salt and pepper |
1/2 cup extra virgin olive oil (first cold pressed) |
1/2 cup parmesan cheese grated |
1 lemon juice to taste |
Directions:
1. Using a food processor, mince garlic, basil, toasted pine nuts, and salt & pepper. Blend well. Add the olive oil and blend again. Finally, add the parmesan. 2. Add lemon juice to taste. 3. Serve at room temperature. This will last for 2-3 days in the 'fridge, or you can freeze it. |
