Peruvian Rice

I have been told this is a staple at the dinner table in Peru.
Ingredients:
1 garlic clove, mashed
2 tablespoons olive oil
4 cups water
2 tablespoons lemon juice
1/2 teaspoon salt
2 cups long-grain white rice
Directions:
1. Wash and drain rice.
2. Saute garlic in oil for a minute or two.
3. Add water, lemon juice and salt.
4. Bring to a boil.
5. Gradually add rice.
6. Cover and simmer 20-30 minutes.
