Have some persimmons this fall and want something different? This salad will bring you back to summer in minutes. Enjoy these sweet, ripe fruits and goat cheese with a tangy basalmis dressing. Ingredients:
1-2 bunches of fresh basil |
optional- add mixed greens (i prefer to focus on flavors at hand) |
1-2 persimmons ripe |
2-3 campari tomatoes |
1 handful of grapes sliced in half |
goat cheese |
1 garlic minced |
pepper ground fresh |
sea salt |
good quality olive oil and basalmic vinegar |
Directions:
1. Dice fruits small and tear basil leaves 2. add oil and vinegar, salt and pepper to taste 3. Roll goat cheese into balls, add to salad and gently toss. 4. This can also be served atop of a crusty white bread that has been broiled with butter and rubbed with garlic. |
