A light, unusual dessert for holiday meals. Ingredients:
1 1/2 cups graham cracker crumbs |
3 tablespoons sugar |
1/2 cup melted margarine |
2 cups persimmon pulp |
3 eggs |
1 1/4 cups sugar |
1 1/2 cups flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon vanilla |
1/2 teaspoon salt |
1/2 cup melted butter |
2 1/2 cups milk |
2 teaspoons cinnamon |
1 teaspoon nutmeg |
1 cup walnut meat (optional) |
Directions:
1. Mix first three ingredients and pat firmly in a pie pan. 2. Bake at 375 for 15 minutes or chill. 3. Mix persimmon pulp in a large bowl and beat in all other ingredients in order given. 4. Pour into graham cracker crust and bake in 325 oven for 1 hour or until firm. 5. Serve with whipped cream topped with chopped nuts if desired. |
