Persian Style Carrot Salad

This is a very tasty, light and easy to prepare salad. It can be combined with grilled meat.
Ingredients:
500 g carrots, coarsly grated
200 g apples, peeled and coarsly grated
60 g almonds, toasted and chopped
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon sugar
Directions:
1. Mix all ingredients together.
2. Don't add salt, it would soak water!
3. Refrigerate at least one hour.
4. Serve and enjoy.
