Persian Spinach Dip With Caremlized Onions |

This is an incredible spinach dip. The caramelized onions makes this an incredible recipe. I served this today at a shower I hosted and it was a big hit. Enjoy Ingredients:
2 pounds fresh spinach washed |
2 sweet onions diced |
2 tablespoons butter |
1 pint plain yogurt |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
1/2 cup walnuts lightly toasted |
Directions:
1. In a large pan cook spinach in water that clings to the leaves until it wilts. 2. Drain and rinse under cold water and gently squeeze out excess liquid. 3. Chop finely and reserve. 4. In medium pan cook onions in butter over medium heat until well caramelized. 5. Cool then mix with spinach, yogurt, salt and pepper. 6. Sprinkle with toasted walnuts and serve. |
