Reminds me of the cold refridgerator cucmber salad but with tomatoes too. I just love it! Especially with tomatoes and cucumbers from our own garden! Ingredients:
1 large cucumber |
1 large tomato (i've also made with more tomatoes) |
1 large onion (i prefer vidalia or walla walla or red onion) |
fresh parsley (as much or as little as you like) |
1/4 cup lemon juice (i prefer freshly squeezed) |
1-2 tbs olive oil |
salt to taste |
Directions:
1. Dice cucumber, tomato, and onion. 2. Mix all ingredients together. 3. Place in fridge for at least 30 minutes. 4. Serve. |
