This rice is unique, but very good. I like it with bbq or glazed chicken.
Ingredients:
2 tablespoons butter
1 1/3 cups uncooked rice
1 teaspoon salt
3/4 cup raisins
2 cups chicken broth
1 cup orange juice
1 tablespoon chopped fresh parsley
1/4 teaspoon grated orange zest
1/4 cup toasted almond slivers
Directions:
1. Melt butter in large saucepan over medium heat. Add rice and cook, stirring constantly, until rice is lightly browned.
2. Add next 4 ingedients, bring to a boil, reduce heat and cover. Simmer for 20 minutes.
3. Remove from heat and let stand for 5 minutes, stir in remaining ingredients.
