This rice is unique, but very good. I like it with bbq or glazed chicken. Ingredients:
2 tablespoons butter |
1 1/3 cups uncooked rice |
1 teaspoon salt |
3/4 cup raisins |
2 cups chicken broth |
1 cup orange juice |
1 tablespoon chopped fresh parsley |
1/4 teaspoon grated orange zest |
1/4 cup toasted almond slivers |
Directions:
1. Melt butter in large saucepan over medium heat. Add rice and cook, stirring constantly, until rice is lightly browned. 2. Add next 4 ingedients, bring to a boil, reduce heat and cover. Simmer for 20 minutes. 3. Remove from heat and let stand for 5 minutes, stir in remaining ingredients. |
