I found this on the back of a pkt dried spearmint leaves from Herbies. Ingredients:
1 cup long grain rice, cooked |
1/2 cup cashews |
1/2 cup pine nuts |
1 onion, finely chopped |
1 tablespoon olive oil |
1 tablespoon asian seasoning (persian) |
2 teaspoons barberries |
1/2 cup green peas |
1/4 cup carrot, finely diced |
1 teaspoon dried spearmint |
Directions:
1. Spread rice in a shallow tray to dry for at least an hour. 2. In a dry pan, toast nuts until just browning. 3. Heat oil in a pan and saute onion until just transparent, add remaining ingredients and stir well to prevent clumping. |
