8 ounces penne pasta |
2 teaspoons garlic, minced |
3 tablespoons olive oil |
4 ounces roasted red peppers, sliced |
6 ounces baby spinach |
4 ounces fat free feta cheese |
Directions:
1. Cook 8 oz penne pasta until al dente. In a pan over medium heat, soften 2 tsp minced garlic in 2 Tbsp olive oil. Add 4 oz sliced roasted red peppers and 6 oz baby spinach. Cook until spinach wilts. Add pasta to skillet, sprinkle with 4 oz fat-free feta, and toss. |
