Perked up Grilled Cheese Sandwich |

Serves 1 Ingredients:
2 slices white bread |
1 ounce swiss cheese, made with 2% milk |
1/4 cup low-fat cheddar cheese, shredded |
1 teaspoon jalapeno, roasted and minced |
2 teaspoons butter, softened |
1/2 teaspoon reduced-sodium taco seasoning mix |
Directions:
1. Combine taco seasoning and butter thoroughly. 2. Thinly coat 1 side of each bread slice with 1/2 teaspoon butter mixture. 3. Heat skillet to medium. 4. When hot, lay down 1 slice of bread, buttered side down. 5. Then, layer slice of Swiss cheese, minced roasted jalapenos and cheddar. 6. Top sandwich with the remaining bread slice, buttered side UP. 7. Flip when sandwich has reached desired brownness. Raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness. |
