I use this recipe all the time in the summer on our salads! I like to mix it up with my greens, and love arugula and radicchio! We eat a lot of salads and this hits the spot til the tomatoes arrive! This recipe was shared with me by a friend! Thank you! Hope you like it! Ingredients:
1/4 cup red wine vinegar |
2 teaspoons dijon mustard |
2 tablespoons fresh lemon juice |
3/4 cup extra virgin olive oil |
Directions:
1. Put all ingredients (except oil) in a small bowl. 2. Using a wire whisk, combine slowly and add oil gradually. 3. Season with salt and pepper to your own taste. 4. You can store this in the refrigerator up to one week. |
