Well, I wanted something pudding-y to eat with organic strawberries, so I tried a few variations to my usual tofu yogurt ... ta-da! A fruit-dipping delight!
Ingredients:
1 (12 1/3 ounce) package mori-nu firm silken tofu, crumbled
1 small banana, very ripe
1 tablespoon apple juice concentrate, thawed
1 tablespoon sugar (3-4 tsp)
2 tablespoons hot water
2 teaspoons vanilla extract
