Perfect to Beat the Summer Heat - Colourful Orange Salad

This is G.V.K. Durga Ravi's recipe from the Thursday magazine. She's an avid reader of the magazine just like me and I'm so pleased to share her recipe here. Enjoy! Note: Cook time is refrigerating time.
Ingredients:
4 oranges, washed,peel removed and de-seeded
8 tender fresh spinach leaves, washed and chopped
2 grated fresh carrots
2 tablespoons plain honey
1/2 teaspoon grated ginger
1 tablespoon olive oil
1 teaspoon sesame seeds
1 pinch sugar
Directions:
1. Put the olive oil, sugar, honey, sesame seeds and ginger in a bowl.
2. Mix well.
3. This is the dressing for the salad.
4. Put the oranges, grated carrots and chopped spinach leaves in another bowl.
5. Mix well.
6. This is the salad.
7. Add the dressing to the salad.
8. Mix well.
9. Refrigerate for atleast 2 hours.
10. Serve chilled.
11. Enjoy!
