This is from Vegan delights by Jeanne Marie Martin. Ingredients:
5 cups chopped potatoes |
1/2 cup oil or 1/2 cup water |
3 tablespoons apple cider vinegar |
1 -2 teaspoon dried parsley, crushed |
1/4 teaspoon basil |
1/4 teaspoon sea salt |
3 dashes cayenne pepper |
3 dashes sea kelp (optional) |
1/3-1/2 cup chopped fresh parsley |
1/2 cup eggless mayonnaise (veganaise is good) |
1/2 teaspoon paprika |
1/4-1/2 teaspoon horseradish, to taste finely chopped or 3 -6 green onions, finely chopped |
sea salt |
3 dashes cayenne |
Directions:
1. Chop and steam potatoes until very tender. 2. Marinate potatoes in the marinade for 2-4 hours or overnight, stirring every half hour, or 3-4 times. 3. Drain off excess liquid (if any). 4. Mix potatoes with all other ingredients. 5. Chill for 1 hour or more before serving. |
