I came up with this when I needed a quick side to go with some grilled meat one day. This is so easy and tasty you won't believe it! Ingredients:
3 medium potatoes, peeled and sliced thin |
salt and pepper, to taste |
parmesan cheese, grated |
extra virgin olive oil |
Directions:
1. Peel and wash your potatoes and then slice thin. Lay out a couple of pieces of aluminum foil about 7 to 8 inches in length. Divide your sliced potatoes between the two sheets of foil. Sprinkle with olive oil, salt and pepper to taste and parmesan cheese. Bring long edges of foil together on each packet and fold down two or three times to seal and then fold each of the ends up tight. Kinda of shake your packets to distribute your potatoes evenly and place on a medium high grill for about 10 to 15 minutes. Flip packets over for about 5 more minutes and then Voila! yummy potatoes! |
