Pita Ingredients:
21g fresh yeast |
500ml warm water |
2tbsp honey (approximation) |
900g bread flour/hi-gluten |
3 pinches kosher salt |
Directions:
1. Mix Yeast and Wet ingredients into a mixing bowl 2. Add dry ingredients and mix by hand or speed 1 in a mixer with dough hook attachment. 3. Dough shouldn't be tacky 4. rise in a covered bowl with a little oil coated around the basin. Allow to double in size. 30-40min 5. preheat your oven to its highest setting 500 or more. 6. Place a cookie sheet, cast iron pan, or a ceramic pizza stone in your oven. 7. Punch it down and portion it how you please about 3-4oz rounds. Allow rounds to rest for 30mins covered. Roll them out into thin circles and allow to rest for about 5-10mins. 8. Season your pita disks with olive oil and a little salt and or seasonings you like. I like za'atar. place the pitas on your hot surface in the oven. keep and eye on them they cook fast. Flip them if you like or allow them to puff up and separate into a pocket. |
