I used to make pancakes with a boxed mix. When I branched out to make my own, my husband never liked the result — UNTIL I MADE THIS RECIPE! You can add blueberries, top with hot, cinnamon applesauce or eat plain! Read more !
Ingredients:
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons sugar
1 cup milk
1 egg
2 teaspoons vanilla extract
2 tablespoons butter (melted)
Directions:
1. Mix together flour, baking powder, salt and sugar in a bowl.
2. Melt butter in microwave or on stove.
3. Add milk, egg and vanilla to dry mixture and mix until smooth.
4. Add melted butter and mix until butter is incorporated.
5. Cook on griddle.
6. Tips: Don't overmix. You want it to be smooth, but if you mix too long, the pancakes aren't as perfect. Feel free to double the recipe. Make small pancakes or really large ones - all work well. You can add blueberries to the mixture and make blueberry pancakes. Or, they are yummy topped with warm homemade applesauce (cut up some 3 or 4 apples, put in a saucepan with 2 teaspoons of lemon juice, 2 TBS water, a generous sprinkling of sugar and a generous sprinkling of cinnamon and cook with the lid on until apples soften and can be mashed with a fork).
