Fresh berries add sweetness and vitamins to this pancake recipe. Adapted from Core Performance. egg, flour, milk, strawberries, olive oil, water, blackberries, blueberries, or raspberries (or mixed) cvt Ingredients:
1 large egg |
1 2/3 cups flour |
2 cups 1% milk |
2 cups sliced strawberries |
3 tbsp olive oil |
2 tbsp water |
2 cups blackberries, blueberries, or raspberries (or mixed) |
Directions:
1. In small mixing bowl, combine egg, flour, and milk, to form thin batter. 2. Heat 1 tsp oil in non-stick skillet. Pour enough batter to form small pancake (you should get 24 dollar-size pancakes). Repeat. 3. Cook until all of the batter is gone. 4. Place pancakes on serving plate and keep warm. 5. Place all berries and water in non stick skillet, stir gently, cook until they are warm. Serve on top of pancakes. |
