My boys favorite dish. Easy to make on the stove top in about an hour. Ingredients:
1 lb ground beef round or 1 lb ground turkey |
2 tablespoons olive oil |
1 medium onion, chopped |
2 garlic cloves, minced |
1 red pepper, chopped |
1 medium zucchini, chopped |
2 celery ribs, diced |
2 tablespoons chili seasoning mix |
1 (28 ounce) can crushed tomatoes |
1 (14 1/2 ounce) can tomatoes (recipe ready) |
2 (14 1/2 ounce) cans pinto beans, drained |
2 tablespoons brown sugar |
Directions:
1. Heat olive oil in large stockpot. 2. Add onion, red pepper, celery, and garlic. Saute until crisp, tender. 3. add zucchini and saute for 2 minute. 4. Add chili seasonings and cook with veggies for 2 minute. 5. Add tomatoes, and beans. Bring to boil, then turn down to simmer. 6. Meanwhile, in a large skillet, brown meat and season with salt and pepper to taste. Drain. 7. Add meat to chili. Add brown sugar to chili and continue to simmer for about 45 minute or until thickened. |
