I used to just buy vegetables based on the meals I would cook. Lately though, I've been buying a variety of things to experiment. I'm sure this has been done in different ways, but it came out so well that I decided to share. Ingredients:
whole fresh green beans |
1/2 large capsicum red pepper |
1/2 small/medium vidalia onion |
splash or two of lemon juice |
1 tablespoon butter or smartbalance butter |
lots of cracked pepper and cracked sea salt |
Directions:
1. Trim ends from green beans, but leave whole. 2. Slice capsicums lengthwise into strips 3. Slice onion. 4. Melt butter in pan on medium/high heat. 5. Toss in veggies. 6. Squeeze 1/2 lemon or a splash or two of lemon juice. 7. Crack lots of pepper and sea salt; you decide. 8. Saute for about 8 minutes or until onion is slightly opaque. 9. I served this with broiled garlic chicken fillets over a bed of white sushi rice. It was low calorie and low glycemic index (G.I.)! |
