This is a comfortable dish for me because it is tasty and easy, Colorful, it adds zip to any supper or can be served as a brunch. Ingredients:
8 bell peppers, small sized |
3 tbs. extra virgin olive oil |
2 cups breadcrumbs |
parsley |
2 cloves garlic |
3 salted anchovies |
1 oz. capers |
2 oz. green olives |
salt |
Directions:
1. Clean the peppers; remove the stem and the seeds. 2. Prepare a stuffing with 1 and 1/2 tbs. olive oil, breadcrumbs, parsley chopped with garlic, anchovies, capers and olives. 3. Stuff the peppers without packing them too tightly, 4. place them in a baking pan, 5. pour over the remaining olive oil and bake for about one hour at 400° F. 6. That's it! |
