My grandkids love this one. Ingredients:
4 medium baking potatoes |
1 (16 ounce) jar spaghetti sauce with meat |
1 (15 ounce) can corn, whole kernel, drained |
1 (4 ounce) package pepperoni, sliced |
1/2 cup mozzarella cheese or 1/2 cup cheddar cheese, shredded |
Directions:
1. Wash potatoes; pat dry with paper towels. 2. Prick several times with a fork; arrange on a microwave-safe plate. 3. Cook, uncovered, on high for 14 to 17 minutes, or until potatoes are almost tender, rearranging once during cooking. 4. Let stand for 5 minutes. 5. Meanwhile, for sauce in a 2 quart microwave-safe casserole stir together spaghetti sauce, corn and pepperoni. 6. Cook, uncovered, on high for 3 to 5 minutes or until heated through, stirring occasionally. 7. To serve, cut a deep slit in the top of each potato. 8. Top with sauce and cheese. |
