Pepperoni Spinach Cheese Bites |

Easy to make and oh so cute Ingredients:
1 10 pkg. sliced pepperoni |
1 10 oz. box frozen spinach, thawed and drained |
2 cups ricotta cheese |
1 1/2 cups parmesan cheese, grated |
1/13 cups mushrooms, finely chopped |
1/4 cup onion, finely chopped |
1 tsp. dried oregano |
salt and pepper to taste |
2 eggs, beaten |
1/4 cup sour cream |
Directions:
1. Preheat oven to 375 2. Put 1 slice of pepperoni into greased mini muffin tin 3. Cut remaining pepperoni into 48 wedges and set aside 4. Add remaining ingredients except sour cream to mixing bowl and mix until blended 5. Spoon mixture into muffin tins 6. Bake for 20-25 minutes 7. Cool completely and before serving top with dollop of sour cream and pepperoni wedge 8. Makes 48 |
