I'm one of those people who won't eat a pizza if it has anything but pepperoni on it... naturally I like pepperoni off of pizza too. This is a quick snack I pulled together one day; simple, but very tasty. Ingredients:
8 ritz-style crackers |
8 pepperoni slices, of preferred thickness |
1 ounce of favorite cheese, shredded (i use colby jack, mozzerella and or or cheddar) |
2 tablespoons ranch dressing |
tabasco sauce (optional) |
Directions:
1. Spread pepperoni slices out on a paper towel and microwave for 15 seconds, just enough to draw some of the grease out [Will prevent crackers from getting soggy as well as lowering the fat content]. 2. Place crackers on a paper plate and distribute cheese to each of them. 3. Put a slice pepperoni on each cracker. 4. Top each cracker with dressing and a single drop of Tobasco sauce. 5. [optional] microwave again for 15-30 seconds, or until cheese begins melting. |
