This is so simple but so tasty. I found it in a BBQ cookbook but I did it on the stove instead. Ingredients:
1/4 cup olive oil |
185 g pepperoni, chopped |
1 kg potato, cut into large cubes |
2 onions, sliced |
Directions:
1. Heat oil & add pepperoni, cook for 1 minute. 2. Add remaining ingredients and cook stirring occasionally for 5 minutes. 3. Turn heat to low & simmer covered for approx 30 mins or until potatoes are tender. 4. Turn heat to high and toss potatoes around for a few minutes to crisp. |
