Pepperoni English Muffin Pizzas |

I pulled this one out of a newlywed magazine. It looked so yummy and so easy to make that I had to share it! Ingredients:
4 english muffins, split |
1 cup tomato sauce |
2 tablespoons fresh herbs, chopped (such as basil, parsley, or oregano, or all) |
2 ounces pepperoni, thinly sliced |
4 ounces mozzarella cheese, shredded |
2 tablespoons fresh oregano, chopped |
Directions:
1. Preheat the broiler. 2. Toast the English muffins in the broiler or toaster until they're golden brown and crisp. 3. Arrange the muffins, cut side up, on a rimmed baking sheet. 4. Stir the herbs into the tomato sauce and spread 2 tablespoons of the sauce over each English muffin half. 5. Top off the pizzas with pepperoni, dividing it evenly; sprinkle each with mozzarella and top with the oregano. 6. Place the pizzas under the broiler for about 2 minutes, until the cheese melts and the pepperoni is sizzling. 7. Serve warm. |
