Pepperoni Crisps

Very low-carb and soy-free. Can also be made with thin-sliced salami.
Ingredients:
1 ounce pepperoni (thinly sliced)
2 paper towels
Directions:
1. Arrange pepperoni on a microwave-safe plate, on top of a paper towel.
2. Cover with another towel.
3. Microwave for about 40 seconds.
4. Rearrange and turn over the crisps to ensure even crisping.
5. Continue cooking for 15-20 second intervals, until desired crispness is reached.
6. Enjoy as-is or with dips, in place of crackers.
