Pepperoni Cheese Bake Fritatta |

Rich, slightly spicy breakfast fritatta. Ingredients:
2 cup (8 oz) shredded mozzarella cheese |
1/2 cup diced pepperoni |
5 eggs |
3/4 cup milk |
1/4 teaspoon dried basil |
try sliced tomatoes and a touch of nutmeg |
Directions:
1. In a greased 9 pie plate, layer the mozzarella cheese and pepperoni. 2. In a a bowl, whisk eggs, milk and basil. Pour over the cheese. Bake at 3. 400 degree for 20-25 minutes or until a knife inserted near the center 4. comes out clean. Let stand for 10 minutes before cutting. 5. 4 servings 6. Note: Greg whipped the eggs and milk for about 5 minutes. It made the 7. quiche have such a nice texture. It was delicious, but very rich. 8. From a leaflet from Quick Cooking 9. 2005 10.
